Why is Breakfast so Important?

In Today’s blog, I will be sharing one of Tania’s (co-founder of THE WELLB COMPANY) and my favorite breakfast recipes. Before we jump into breakfast droolville, let us discuss why breakfast is the most important meal of the day.
Breakfast is your replenisher. With dinner or a late-night snack being the last meal of the day, we are fasting while we are sleeping. When we wake up, our bodies are needing essential nutrients to regenerate ourselves for the day. Breakfast replenishes your supply of glucose to boost up your energy levels and brain alertness.  Breakfast can easily be overlooked because we are busy getting ready for the day or in a rush to leave home to make it to work on time, but it is very important that we don’t skip this meal. During those busy mornings, my go-to is either overnight oats or delicious smoothie packed with fruit, spinach, oatmeal, a bit of protein powder, and pecans to get me going and it keeps me full until lunch time. If there is no time to make breakfast for yourself, try preparing meals ahead of time and place in freezer or make overnight oats (super easy & convenient).
Making sure you have breakfast isn’t only important for adults, but for kids as well. Kids need the necessary vitamins and nutrients to jump start their day especially when they have school. Eating will give them energy for the day, make them more focused in class, and less cranky which can improve their schoolwork. I know some kiddos who are not so fond of eating breakfast. My 5-year-old would skip breakfast if it were up to her, but I like to have her breakfast look colorful and appetizing. She loves to have her breakfast with a side of fruit or yogurt. It may be a bit harder to prepare breakfast before school because everyone is getting ready, but if there is no time, you can make it to go so they can eat it on the way.
Eating breakfast improves our overall health, can lower the levels of bad cholesterol, better memory, and lowers the chances of diabetes, heart disease, and being overweight. Except, what you eat can either affect your health or improve it. Avoid the donuts and lean towards foods that have dairy/non-dairy, protein, nuts, healthy carbs, and fiber. Avoiding breakfast can lead you to overeating during lunchtime or you may be too hungry that you end up reaching for a snack that may be high in fat and sugar.
Now let us get to our favorite breakfast recipes!
Blueberry & Almond Butter Overnight Oats
This recipe is Tania's go to & is one of my absolute favorite breakfast that is meal prepped (because it is so easy, you'll see).
Ingredients:
·1- 2cup of blueberries
·1 1/3 cup of old fashioned oats ( or steel cut oats, just note that these take longer to soften)
·3 tbsp light brown sugar, packed (or a drizzle of honey)
·1 tbsp chia seeds
·1 1/4 cup of milk (almond milk or your choice of milk)
·12oz vanilla yogurt
.3 table spoons of almond butter (or any nut butter)
·5 half pint jars with lid
Directions:
1. In a large bowl, add the yogurt, oats, milk, chia seeds, and blueberry mixture. Stir it all together.
2.Spoon in half of the mixture into 5 of the pint jars. Top it off with more blueberries (or any fresh fruit).
3.Cover with the lid and place in the fridge. The overnight oats are good for up to a week.
BONUS
Sunshine Omelet
*measurements are to your liking*
  • Egg (whisked)
  • Diced sweet pepper (my favorite is orange)
  • Salt, pepper, garlic powder, your choice seasoning
  • Spinach leaves
  • Olive oil, avocado oil, your choice
  • Your choice of shredded cheese (Colby jack for me!)
Directions:
1. Add oil to a skillet on low-medium heat and toss in spinach leaves. Remember, don’t be afraid to add a good amount of spinach since it tends to shrink.. A LOT.
2. When the spinach is almost cooked, add in the diced peppers, egg, and sprinkle your choice of seasonings.
3. When the egg is starting to cook, added the shredded cheese on top.
4. Once you see the egg is almost cooked, fold into omelet, and flip to finish cooking.
5. Top it off with a bit of your favorite salsa and add your favorite side like a fruit parfait, turkey bacon, or toast.
